5 limes (with no pith or pips)
200 gr. brown sugar
A few sprigs of peppermint
½ l soda (or a citrus soft drink such as Sprite)
Aged rum (optional)
1.Pour the sugar into a blender jug and process until it gets as fine as possible.
2.Add the lime zest and pulp, the peppermint, and process again.
3.Add the soda, rum, pour the mixture into a Lékué silicone ice cream mould, and freeze.
